Cooking Instructions:
1) Oven roasted:
Pre-heat oven at 325° F. Lightly oil (olive) a non stick pan, place skewers in the pan. Place the pan in pre-heated oven for 8 to 10 minutes depending on oven. Remove pan from oven and let rest for a few minutes, covered with foil. Skewers should be slightly under cooked, as they will continue to cook when removed from the oven.
2) Barbecued:
Pre-heat barbecue. Rub skewers on all surfaces in a little bit of olive oil. Turn the grill to a minimum or raise the grill surface if you use charcoal. With a paper towel and a bit of olive oil, oil the clean surface of the hot grill. Place skewers on grill for a few minutes, flip them and cook for a few more minutes. Remove and place them in a pan to rest for a few minutes, covered with foil. Skewers should be slightly under cooked, as they will continue to cook when removed from the grill.
Serving suggestions:
- Serve as is or simply with a wedge of lemon
- Serve with Tartar or Curry Sauces
- Serve with a light Herb Beurre Blanc:
For 4 people: In a sauce pan, cook 3 Table spoons of finely chopped shallots with a cup of dry white wine. Add a pinch of each of your favorite fresh herbs: (basil or watercress, parsley, a bit of cilantro) When reduced to the consistency of an heavy syrup, add ½ cup of heavy whipping cream. Cook for a minute or 2 and transfer sauce to a blender. Blend at high speed, adding 4 oz of butter a little at the time. Add a couple of pinches of the same fresh herbs that you have used in the reduction. Blend well, correct seasoning (salt if needed, fresh grounded pepper a bit of lemon juice) Pour sauce on plates, place skewers on sauce and serve.

Twelve 3 oz. SkewersYour wild Yukon Skewers have been quick-frozen to lock in their flavor and nutrients, and shipped to you on dry ice. Upon arrival, please freeze or refrigerate. Skewers will keep in the freezer for up to 6 months; once thawed they should be cooked and used within 1-2 days.
Once a frozen skewer is thawed, it can be re-frozen though we do not recommend it, as taste and quality may begin to suffer. No skewer should be re-frozen if it has been thawed 2 days or longer.
