PREMIUM SALMON

To make excellent smoked salmon, I must start with impeccable fish.

DETAILED FILLETING

Each fillet is inspected for consistent color, firm texture, and no blood spots. The salmon must smell sweet and clean.

DRY CURING

In the European tradition, hours of dry curing are required with both salts and spices. This develops an even texture throughout the salmon.

SMALL-BATCH SMOKING

Delicate and subtle smoke from the burning of hardwoods and fruitwoods creates complex layers of flavor and a clean finish.
